Potato & Sausage Soup

This post is for my friend, Ivonne at Cream Puffs in Venice. With the cold weather we have had recently (and what’s coming up next week), I thought it would help warm us up!

Potato Sausage Soup

INGREDIENTS:

* 1/2 pound ground pork sausage, torn into small pieces
* 2 medium baking potatoes, diced
* 2 to 3 slices bacon, chopped
* 3/4 cup onions, diced
* 1 medium to large clove garlic, minced
* 1 c escarole, chopped
* 2 tbsp chicken base
* 4 c milk
* 1/2 c cream
* 3 drops hot pepper sauce
* 1 tbsp butter
* Salt & pepper, to taste

PREPARATION:

Brown onions and garlic in cast iron skillet until tender. Remove from skillet and set aside. Brown bacon and sausage (you can use the same skillet) until cooked through. Cook potatoes in sauce pan until almost done. Drain. Combine chicken base, milk, potatoes, butter, onions and garlic in sauce pan. Simmer 15 minutes. Add remaining ingredients. Simmer until hot, stirring so it doesn’t scorch.
